Croissants in San Luis Obispo, baked by the Scout bakery
Every Scout croissant is made from scratch in Morro Bay on a 3 day lamination and served every day at our cafes in San Luis Obispo and Morro Bay.
Every croissant in a Scout case is made from scratch at our bakery in Morro Bay. The dough runs on a 3 day lamination, and the finished pastries go out to all 3 Scout cafes every day. If you are looking for a croissant in San Luis Obispo, this is where ours come from and how to get one.
Where to get a Scout croissant
Scout cafes are open 6:30am to 6:30pm every day.
- Garden Street, downtown San Luis Obispo. 1130 Garden Street, San Luis Obispo, CA 93401. The first Scout, open since January 2014.
- Foothill, next to Cal Poly. 880 Foothill Blvd in University Square, just outside campus, with a parking lot and a patio.
- Morro Bay. 390 Morro Bay Blvd, Morro Bay, CA 93442, a few blocks up from the Embarcadero. This is the cafe with the bakery and the roastery under one roof.
There is also a Scout on the Cal Poly campus at yak'ityutyu, next to the Welcome Center. It is run by Cal Poly Campus Dining, so its hours follow the academic calendar.
Why our croissants take 3 days
Lamination is the part of croissant making where butter is folded into dough, over and over, to build the thin layers that puff and shatter in the oven. Our dough runs on a 3 day lamination. The time matters: the dough rests between stages, the butter stays cold and firm, and the layers hold their shape so the inside bakes open and airy with a crisp shell.
The bakery runs every day, so the case starts fresh every morning. For the longer version of the process, read How we make our croissants.

What is in the case
Croissants are the anchor, and the same bakery makes everything else you see at the counter: laminated pastries, cookies, scones, muffins and loaves, plus the bread our sandwiches are built on. The syrups in the drinks and the almond milk are made in house too.
The menu page lists what is being served right now: On the menu.
What to drink with it
Classic Espresso is the coffee in every espresso drink at Scout, and Scout House Blend is the coffee on drip at every location. Both are roasted by HoneyCo, our own roastery, which sits behind glass at the Morro Bay cafe. A plain croissant and a drip coffee is a simple order that shows both the bakery and the roastery at their best.

Visit the bakery
The bakery is in the Morro Bay cafe, in the same building as the HoneyCo roastery. Order a croissant and a coffee, sit where you can see the roaster, and watch a batch run. Plan a visit to Scout Morro Bay.
